Well it's all down to Rule No.4 - Take calculated risks. To craft their Noble Riesling viticulturist James Bowskill takes a risk, leaving the grapes out to get the botrytis, a fungi that shrinks the grape otherwise named as Noble Rot! It's a risk but with huge reward delivering syrup honey & honeycomb with lashings of apricot and citrus flavours.
